Apple & Honey Cobbler

Ingredients
Apple Filling:
6-8 Granny Smith Apples, Peeled and Sliced
1/2 cup Wild Nectar Honey
2 tbsp Brown Sugar
1 tbsp Lemon Juice
1 tsp Vanilla Extract
2 tsp Cinnamon
1/2 tsp Nutmeg
1 tbsp Cornstarch
Pinch of Salt
Cobbler Topping:
1 1/2 cups All-Purpose Flour
1/3 cup Brown Sugar
1/3 cup Caster Sugar
1 1/2 tsp Baking Powder
1 tsp Cinnamon
1/4 tsp Salt
250g Cold Unsalted Butter, Small Cubed
1/3 cup Heavy Cream
1 tsp Vanilla Extract
Instructions
Preheat oven to 350°F (175°C).
Place all the Apple Filling ingredients into a pie dish or baking dish and toss until combined and no visible cornflour is left. Place in the oven to warm slightly while you make the topping.
Mix flour, brown sugar, baking powder, cinnamon, and salt then scrunch in cold butter until the mixture looks like chunky crumbs with some pea-sized butter pieces remaining. Add the cream and vanilla then roughly mix just until the dough comes together. Resist the urge to over mix this! It should not become smooth like cake batter.
Drop thick crumbles and rustic chunks of dough over the apples. Leave a few gaps so the filling bubbles through. The topping will spread out as the butter melts.
Bake for 40–45 minutes or until golden brown and bubbling around the edges.
Cool for 10–15 minutes then serve with your favourite vanilla ice cream and finish with a drizzle of Wild Nectar Honey.
